Black Bean Burritos

Black Bean Burritos

Main Ingredients:

* 1 medium to large onion
* 1 C water
* 1 can black beans
* 2 T apple cider vinegar

Spices:

* 1 clove of garlic, minced
* 1 – 2 tsp cumin
* 1 tsp cayenne pepper organic
* black pepper, pinch

Toppings:
o 1 tomato, cubed
o 1 avocado, peeled and cubed

METHOD
1. Cut onion into rings
2. Place in pan, add 1 C water, stir and cover.
3. Strain and rinse black beans.
4. Mash, food process, or blend beans into a puree
5. Add apple cider vinegar and mix.
6. Add spices and mix.
7. Add bean mixture to onion mixture and mix.
8. Remove from heat and cover.
9. Prepare toppings.
10. Use a leaf of lettuce or tortillas to wrap up the bean & topping goodness!
